Hot and sour fish relish
- 100g (31/2oz) Maldive fish
- 3 tbsp chilli flakes
- juice of 1/2 lime
- 1/2 tsp salt
- 2 large onions, finely chopped
- Put the Maldive fish, chilli flakes, lime juice and salt into a pestle and mortar or food processor. Pound or blitz until the ingredients are roughly combined.
- Add the onions and gently pound or blitz them into the mix until you have a coarse paste. Taste for salt and lime and serve.
