Katta Sambol



Hot and sour fish relish

  • 100g (31/2oz) Maldive fish
  • 3 tbsp chilli flakes
  • juice of 1/2 lime
  • 1/2 tsp salt
  • 2 large onions, finely chopped
  1. Put the Maldive fish, chilli flakes, lime juice and salt into a pestle and mortar or food processor. Pound or blitz until the ingredients are roughly combined.
  2. Add the onions and gently pound or blitz them into the mix until you have a coarse paste. Taste for salt and lime and serve.
