Green herb salad

Green herb salad
  • 250g (9oz) gotu kola (pennywort) (1 bunch)
  • 3 tbsp freshly grated or desiccated (shredded) coconut
  • 1/2 medium red onion, finely chopped
  • 1 green or red chilli, deseeded and finely chopped (optional)
  • 1/2 medium tomato, finely chopped
  • 1 tsp Maldive fish, crushed (optional)
  • 1/2 tsp ground black pepper
  • uice of 1/2 lime
  • 1/2 tsp salt
  1. Cut off half the length of the stems of the gotu kola bunch and set aside. You can use these to make Gotu Kola Kanda.
  2. Discard any spoilt leaves and wash the gotu kola thoroughly. Taking a handful of the washed leaves with stems at a time, cut the gotu kola very finely. Put it in a medium bowl.
  3. Add the coconut, onion, green chilli, tomato, Maldive fish (if using), pepper, lime juice and salt. Mix well and serve.
