Green herb salad

- 250g (9oz) gotu kola (pennywort) (1 bunch)
- 3 tbsp freshly grated or desiccated (shredded) coconut
- 1/2 medium red onion, finely chopped
- 1 green or red chilli, deseeded and finely chopped (optional)
- 1/2 medium tomato, finely chopped
- 1 tsp Maldive fish, crushed (optional)
- 1/2 tsp ground black pepper
- uice of 1/2 lime
- 1/2 tsp salt
- Cut off half the length of the stems of the gotu kola bunch and set aside. You can use these to make Gotu Kola Kanda.
- Discard any spoilt leaves and wash the gotu kola thoroughly. Taking a handful of the washed leaves with stems at a time, cut the gotu kola very finely. Put it in a medium bowl.
- Add the coconut, onion, green chilli, tomato, Maldive fish (if using), pepper, lime juice and salt. Mix well and serve.
